A Saturday Sausage Casserole

I spent this morning whipping together three lots of different meals so I don’t need to worry about work lunches for the next week. Or, by the look of my freezer, the next month. One meal I made four portions of was a sausage casserole; it took just over thirty minutes and I tested out a portion for my lunch. After running 10k this morning, this casserole did the JOB. If you’re interested, I’ve popped my recipe below!

Ingredients | For four happy lunch breaks

  • Five pork sausages
  • 1 tin of baked beans
  • 1 red onion
  • 1 courgette
  • 1 pepper
  • 1 tin of chopped tomatoes
  • 1/2 carton of passata
  • 1 tablespoon of tomato puree
  • 1/2 teaspoon of Very Lazy chopped red chillies (pictured above)
  • A sprinkle or two of salt and pepper

Method

  1. Fry the sausages until cooked through
  2. Dice the red onion and add to the pan
  3. Dice the courgette and pepper and add to the pan once the onion starts to soften
  4. Once all of the veg is cooked through, add the baked beans and stir for three minutes
  5. Add the chopped tomatoes, passata and tomato puree; stir
  6. Season with the chilli, salt and pepper and bring to simmer
  7. Simmer for ten minutes

There’s nothing quite as warming as a casserole, especially when you’ve bought the sausages from the Butchers. It’s even more warming when you know you’ve got enough portions for the next couple of days. Aaaand relax. But EVEN better? It’s packed with all of the good stuff and it tastes YUM.
